If you enjoy asparagus with your Easter meal, there will be plenty coming from California fields. The California Asparagus Commission says farmers will harvest good supplies of fresh asparagus through May. Mexican asparagus remains on the market, too. Warm spring weather caused the California crop to mature earlier than usual. California farms produce about 60 percent of the asparagus grown in the United States.
